Title: How to slightly change structure of Disulphide bonds and protect them?

I have several questions that I desperately need answers to:

-How to manipulate Disulphide bonds and at the same time  protect them without totally looseing their original structure?

-Besides water how can you manipulate/slightly break Hydrogen bonds and at the same time build/create and protect them?

-What are the other forms of aqueous acetic acid or acetic acid other than vinega

With this information I hope to produce a product
