I'm not sure that cuprous nitrate would ever exist.

It exists. There's a small article on it in wikipedia.

And it can be possible to make it by double decomposition of cuprous compound with nitrate salt/solution.

I have always believed that cuprous compounds are water insoluble. Which of them are soluble?
