Title: How do mature and mild cheeses differ?

So many cheese related posts lately, here is another.
Why is 'mature' cheese, crumblier than 'mild' cheese? Is it just because it's older?

I think it gets dryer.. and therefor looses moisture to to the age and becomes more crumbly! That would be my guess anyways!

I've read on certain packs of mature cheese about the formation of salt crystals which I have indeed seen and tasted......I wonder if this has something to do with it.

Al i know is i dont like mature , so the wife buys it knowing i'm not going to cut big chunks off which leaves more for her.

It is a question of time - it does get a little dryer but not appreciably. The main thing that happens is the mold has more time to make the flavor that each particular mold gives to it particular cheese. It is all in the mold.

Isn't salt used to help preserve and dry the cheese??
