Title: When to use italics in a write up?

I am currently writing a medicinal chemistry review on penicillins for my university dissertation. I am wanting to mention streptococci but should the word be in italics? And also should the beginning letter be upper or lower case?

Species names in long, abbreviated and species / group name forms are traditionally italicised: e.g. Streptococcus sp. and Strep. pneumoniae

If you were saying "Streptococcal infection", you probably wouldn't italicise that.
