I've been trying for a month now to either extract or make KNO3 from things found in nature such as urine, ashes, soil ect. But I'm looking for a way to do this fast instead of a niter bed which would take over a year and so far all my attempts have failed. How do i do this?.

A nitre bed is probably the best way.
If there was a quicker route, they wouldn't have bothered with nitre beds which are, as you say, slow.
