Why do crystals consistently form the same shapes?

Why do crystals grow according to structures such as cubic (diamond), hexagonal (quartz) and octahedral etc.... and never waver from these structures?

The macroscopic form of the crystal is a consequence of the microscopic configuration of the atoms, which is constant for a particular type of atom.
