How does black coffee sober a person up?

I really don't think it sobers them up but just gives them a boost of stimulant..and fluids and anyway water or liquid will help to flood the body and help dilute the alcohol....Lots of water!

Booze is a depressant so depresses and slows down..as caffeine is a stimulant...it makes them some more alert.. but still drunk...until alcohol has moved through.. so lots of liquid!

As a scientist I have repeated this experiment many times - 30 some odd years ago in my wayward youth.
