I eat organic uncooked vegetables + uncooked fish (sushi, cebich)
any nutritional deficience could appear?

It seems that there is not a lot of research on this yet, but one point I found was that warming or cooking some foods allow for better access to the vitamins and nutrients inside, as long as it's not over-cooked.

It depends on the type of fish. If it is oily then you are doing fine. I would also eat lots of salad, fruit and seeds. I'm not sure about calcium though. You might want to check on that.

People might tell you that you need more carbs but with our more sedentary lives we need less and less.

i'd go to the organic/farm raised seafood as well since all waters>ocean and lake&streams<<are heavily contamined.

Just for notes: Sushi actually means "it's sour" and refers to the rice, not the fish. Raw fish is sashimi.
