How can you make chocolate harden more quickly?

NJ asked the Naked Scientists:
   
Hello, at my child's birthday party I want to serve different treats dipped in melted chocolate, but want the chocolate to harden fast, is scientifically possible to make the process faster?

Make sure the thing you dip into it is really cold or frozen.

Thats how we do it here.... My mom did a lot of chocolate making with molds etc... always set them up in the freezer to speed hardening time!

Also, go for the lowest fat content - 70%+ dark chocolate should set quicker than milk chocolate. (I think!?)

I should think most of them would, when it's coating something like a strawberry!  Or was I just a strange child?
