Facts behind fried food

Hello all,

Intuitively we know certain food are bad and may cause harm when devoured in large quantities over a period of time. But what facts are proven in scientifically carried out studies?

Fried foods are one such thing that many of us know can't be good for us but can't live without  [;D]
What are the facts behind:
a) Certain types of oil that we 'know' cause harm in certain conditions (high temperature, etc.)
b) Harmful chemicals formed in frying process in certain conditions (high temp, food types, etc.)

Finally, what's the basis behind recent articles crying "donuts cause cancer"?

I think "intuitively we know" - is far from the mark.  We know because of scientific/epidemiological research. 

The current knowledge of health in food types is relatively recent - people of my parent's generation (born before WW2) would be able to recount a very different "received wisdom" that was around in their childhood.   

There is a huge amount of research on the various dangers to long term health of an excess of fried food - GIYF.
