Hadrian,

Merry Christmas, Best wishes, and - oh - don't burn the Plum Pudding or Haggis or Corned Beef or whatever is the Irish Christmas thingy food.

Love ya dude!

Here's a quick quiz..

What does the ' corned ' in Corned Beef refer too ?

WEll I know how they make corned beef, and at least by the recipe my grandmother used there is no corn but it calls for these ingredients in the cure for the meat, and it takes 8 days to do it!

1 and 1/2 cup. salt
1 cup of sugar
3/4 teaspoon of saltpeter ??? !!!!!!
1 (8 to 10 pound brisket)

I know alot of people use the pepercorns as a very basic seasoning, so I think it is probably the pepercorns in the seasoning as the recipe for making your own corned Beef brisket is above!

sugar improves flavor and saltpeter gives the meat a reddish color!!

I'll never eat it again!
