The term "flat" might be a bit misleading here. I think what it means is that, at very great distances, you can neglect the curvature of space, so, "not curved" might be a better term.
Whether curved or not, space still has the three dimensions that we are familiar with, and the stars that we observe are distributed within three dimensional space.
