How does the immune system converts antigen structure into antibodies?

How does the immune system converts antigen structure into antibodies?

Hello

Can anyone explain please:

Antigen presenting cells eat antigens and present their fragments on their surface. How they first identify the antigens to eat them (how they select what to eat)? How they bind the fragments on their surface receptors (how they produce so specific receptors that bind the fragments)?

Then these presented fragments trigger specific B cell antibodies production and T cell receptors production that is specific to these fragments. How does that happen? How the cells create the right new locks for these specific keys? How these specific locks then get encoded into DNA and remain in the immune system for them to remember them?
