This is a quote from a movie. But don't particles in a human body gradually gradually break down into simpler elements and become part of the earth/universe?

No and yes!
If you shrink-wrapped a fresh corpse and x-rayed it from time to time you could detect anerobic decay but no change of total mass. I suspect that "coffin liquor" contains fewer distinct molecular species than the source body but it must contain the same number of atoms.
Except that some (particularly potassium) are radioactive, and whilst normally maintained in balance by diet and excretion, will emit various particles that will penetrate the shrink wrap and gradually lose mass.

All i know is that a Cold coffee mug & a Hot coffee mug have differing masses even thou the contents remaining exactly in the same proportion.
