The link is harmless to a human (there's a hidden bespoke and random email address embedded within the page that a human won't see but a harvester will pick it up and then attempt to use it; this tells project honey pot that this address has been harvested, where from and by whom. The IP of the sender is then logged.

I don't think this would be of much use. Let's just assume that the bots go onto the page and email the hidden email an email (spam). And then your set up email will start spamming them back. But, usually every mail service provider (I believe most bots are made to use Emails from good service providers) blocks a spammer (In this case you are the spammer) once the spammer sends over a certain amount of spam emails. Basically, none of the spam is actually going to affect the actual spammer.
...Unless of course the actual spammer (bot) is using his own mail server which I highly doubt;
That's also the reason spammer bots use a frequency algorithm, which spams a person after certain amount of time has passed. Although what they are doing to the forums is kind of a (D)Dos spam. They are not only spamming but also trying to take your server down and eat your bandwidth. To stop them, I think you should opt for Cloudflare service and add certain security measures for registrations and posting.
If would love to suggest some security measures that could be added.

You've missed the point; project honeypot is tracking the IPs of spammers networks; when people try to register for things in future, their IP is checked against the database and all the comments from other honeypotters are visible; this enables culprits to be excluded from registering for things like this forum.

Ah! That's quite good then. Although the bots will use proxies but there will be a time (atleast 1-2 years) when your forum will be very resistant to such spams.
