In a recent episode during Science Fact or Fiction, mention was made about high vitamin yield vegetables generated in space.  I found the wording of the answer curious.  It made it sound like space radiation mutates seeds to produce giant vegetables.  It further sounded like the claim was that a giant veggie had more vitamins.  It was unclear if there were more vitamins because the veggies were bigger or because the concentration is higher?  Do I get twice the vitamins from eating half the volume of veggies?

There were, according to Google, "about 347" results returned for the search criteria ("space" or "low gravity") and "vitamin" and "vegetable"
