If Majority of Ukrainians & Majority of Russians never wanted a War..

Why then did it happen?

If a Major chunk of the world's global population is in favour to desist War, Why then does War keep taking place?

The military contract varies from place to place but the essence is universal and can be traced back to Roman and earlier times. In exchange for secure employment, food, clothing and medical attention, the professional soldier agrees to obey orders. For the most part this seems honorable as armies are nowadays called "defence forces", and what could be more honorable than defending one's country and countrymen against the forces of evil?

Wars are started by the lowest form of life - politicians - for their own glorification or to deflect attention from their manifest shortcomings. Mere conquest and spreading the gospel became unfashionable in the last century, but an astute politician will identify an oppressed minority in a foreign country, and deploy the army to defend them, whether they like it or not. Sudeten Germans were a good casus belli, as are Muslims everywhere (ask your local terrorist), and currently, Russian-speaking residents of Ukraine. The only way to rescue your chosen victim from his friends, neighbors and business associates is, of course, to flatten their city and torture them. Next thing you know, the ungrateful receiving defence forces start fighting back, so you label them as aggressors and conscript the rest of the population, thus solving the unemployment problem and blaming the inadequacy of all your public services on The War instead of your incompetence.
