I'm wondering whether the fact that the universe was increasingly smaller in the past has been taken into account when measuring the gravity and energy scientists measure? Seems plausable that could make the path of light *seem* more bendy...

The study of quantum cosmology does exactly this. It takes into respect the size of the early universe and how appropriate it is to apply quantum mechanics to the early cosmological state of the universe.
So yeh, all this stuff has been considered.
