How does self leveling cement work?

How does self leveling cement work?

How does self leveling cement level out a floor? Is it just the fact that it is thin enough to run  ?

Here is a nice review article about self leveling cement.

It appears to be for leveling underlayment, and suggests up to 1" thick.  I assume that you MUST put some flooring such as linoleum on top of it. 

It is not for thick concrete work.

It is apparently liquid enough that it will flow and self-level, although there may be some surface tension on the edge of the flow, so it may need to be initially spread across the floor and into corners, and obviously will need to be thick enough to cover the floor.
