What is your favorite fish and favorite way of preparing/cooking it?

Any fish, any way, hot, cold or raw, though I can happily live without tuna, and Thai pickled gourami seems to be a lot of spines and bones with very little to recommend it as food or building material - probably the only food I have ever bought and thrown away after one bite.

I'm rather partial to trout, grilled, with almonds (a cliche, but...)
I'm also rather fond of traditional fish + chips (and rather grateful that my local chippy is still open in spite of the virus).

There's a restaurant not far from my parents' house that has great fried catfish. I'm also rather fond of baked salmon.

The best combination is a simple salad with a little Italian dressing and grated parmesan with a slab of grilled salmon.

I enjoy pan-fried salmon with crispy skin.

Probably the most unusual fish I have tried is stingray wings. They have a mesh of cartilage to control movement.

Interesting that you consider it unusual! Skate (ray) and huss (a round-bodied cartilaginous fish with pink flesh) used to be the cheapest options on the menu of every fish and chip shop in the UK when we had control of our coastal waters, but are now somewhat endangered thanks to the EU Common Fisheries Policy. Fresh ray is delicious and is making a comeback au beurre noir on gourmet menus, but I haven't seen "rock salmon" (any pink-fleshed shark) for sale for years.

On the other hand, the ownership of UK waters (hint, they are owned by the UK) is irrelevant to its conservation status

The UK has done a better job of preserving our stocks .
