What causes cats to become excited all of a sudden?

What causes cats to become excited all of a sudden?

Why do cats get big burst of energy and runs around and chase invisible things randomly? I have an older cat that is always calm but, randomly, has these big burst of energy. Why does she do that?

What does everyone think?

They chase flies and moths which we might not be able to see. So it looks like they are chasing nothing.
